The hunt is unique, it requires patience and dedication, as well as a great love of this subterranean mushroom. The specific scent that comes from damp soil, mostly in oak woods, is impossible to discern for human senses, but a trained dog’s sense of smell will feel it and find the truffle.

By rapidly moving its paws, the dog points to the area where it has found a truffle, showing its owner the spot where this underground treasure can be unearthed.Truffle dogs are highly prized and have been bred and trained for truffle hunting in our family over many generations.

Any time of day or night is suitable for truffle hunting. One can never know when truffles will release their magical scent, which makes truffle hunting always unique and adventurous.

Truffle

The best that Istrian soil has to give. Delicious, divine, rustic, the pinnacle of gastronomic experience. Nature’s wonder, incomparable and irreplaceable.

The truffle is a subterranean fungus, growing in a symbiosis on the roots of certain kinds of trees, most commonly the oak, beech and hazelnut. In order to preserve the natural cycle and habitat of truffles, the sites of this treasure need to be handled in a conscientious and responsible manner, enabling the unimpeded continuation of the mycorrhiza. The Mirna river valley is the largest location where the Istrian white truffle is found.

There are several types of truffles growing in Istria, among which the Istrian white truffle (Tuber magnatum pico) is by far the best known and most prized. It matures from September until January. This is also the best period to enjoy this premium gastronomic delicacy. In winter, one can also find the black truffle of the Tuber brumale variety, and if you want to enjoy truffles all year round, the Tuber aestivum black truffle is there for you to savor, as well as some of the numerous truffle products from our range.

GASTRO CORNER

The gourmand cuisine of today cannot be imagined without this subterranean mushroom which is considered the pinnacle of world gastronomy and an exquisite ingredient for various dishes, from homemade Istrian pasta and boškarin beef to highest quality Adriatic fish. We believe that every great thing takes time. So take your time and surrender yourself to the adventure of flavors, aromas and sensations with Istria’s gold – the truffle. Time invested into right things will always bring you back to memories of those wonderful moments.


Ravioli stuffed with homemade cheese in truffle sauce

Time of preparation: 30 min

Ingredients (2 servings):

  • 200g of cheese-stuffed homemade ravioli
  • 90g of Prodan Tartufi Tartufata
  • 30g of butter
  • ½ dl of cooking cream
  • Parmesan cheese
  • Salt

Cooking procedure: Melt the butter in a pan over low heat and add the Tartufata. Meanwhile, cook the ravioli and add a pinch of salt and two tablespoons of the ravioli cooking water into the pan. After 10 min of braising over low heat, add the cream and some parmesan in the pan. When ravioli are cooked, pour the sauce over them and then freely add parmesan and fresh truffles.


Truffle beefsteak in truffle and porcini sauce with pea puree

Time of preparation: 30 min

Ingredients (2 servings):

  • Two 4cm thick steaks
  • 90g of Prodan Tartufi Truffles and Porcini
  • 60ml of Prodan Tartufi White Truffle Olive Oil
  • 1 cup of peas
  • 40g of butter
  • Worcestershire sauce
  • Salt
  • Pepper

Cooking procedure: Melt the butter (30%) in a pan over low heat and add the truffle and porcini sauce. Meanwhile, put the peas with a pinch of salt in the water to cook. Season the steaks with salt and pepper. Prepare a grill pan for the beefsteak and cook until you’re satisfied. For a medium done steak, we recommend cooking the steaks for 8 minutes, two minutes each side for each steak. When finished, add a few drops of Worcestershire sauce and white truffle olive oil on the steaks. Add the remaining butter to the cooked and drained peas and strain everything together. When serving, pour the finished sauce over the steaks and grate some fresh truffles in your desired amount. Serve with the pea puree.


Gourmets truffle burger with beet chips

Time of preparation: 50 min

Ingredients (2 servings):

  • 2 burger buns
  • 2 patties, 140g each
  • 2 beets
  • 90g of Prodan Tartufi White Tartufata
  • Prodan Tartufi Semi-Hard Sheep & Cow’s Cheese with Black Truffles
  • Lettuce
  • Salt
  • Pepper

Cooking procedure: Wash the beets, cut them into thin slices and set them on parchment paper to bake in a pre-heated oven at 200°C. Cook the patties on a heated grill 3-4 minutes each side. Cut the buns in half and heat them on the grill. At the end of cooking, add the truffle cheese on the patties and keep grilling for a few more minutes until the cheese melts. Let the baked beets cool down and season them with salt and pepper. Place the lettuce and meat with cheese in the buns and add the White Tartufata sauce. Serve with beet chips.


Mediterranean salad with truffle cows cheese

Time of preparation: 10min

Ingredients (2 servings):

  • Watercress
  • 250ml of Prodan Tartufi Black Truffle Olive Oil
  • Prodan Tartufi Semi-Hard Sheep & Cow’s Cheese with Black Truffles
  • 5 figs
  • Salt
  • Pepper
  • A branch of rosemary
  • Oregano
  • Vinegar

Cooking procedure: Wash the watercress and figs. Cut the figs into rings and cut the cheese into thin slices. Add salt, pepper, herbs, vinegar and black truffle olive oil.


Fresh whey cheese mousse with pear and black truffle marmalade

Time of preparation: 1h

Ingredients (2 servings):

  • 20dg of fresh whey cheese
  • 1 dl of heavy cream
  • 1 vanilla
  • 30g of Prodan Tartufi Truffle Marmalade

Cooking procedure: Add vanilla to the heavy cream and mix for 3 minutes. Gradually add whey cheese and mix for another 3 minutes. Put the mix in the fridge for 1 hour. Serve with truffle marmalade.


Tagliatelle pasta with black truffle sauce

Time of preparation: 15 mins

Ingredients (2 servings):

  • 180 g (a bit less than 7 ounces) fresh tagliatelle pasta
  • 40g of Prodan Tartufi tartufata
  • 1 tbsp butter (I used ghee butter)
  • 2 tbsp pasta water (water from the pot where pasta is cooking)
  • 1 heaped tbsp grated Parmesan cheese
  • extra-virgin olive oil

Cooking procedure: Boil the salted water in a large pot and when boiling add fresh tagliatelle pasta and cook following the instructions on the packaging (usually it takes only 2-3 minutes).

In a larger saucepan melt the butter, add ready black truffle meal, 2 tbsp of pasta water and stir so it gets combined.

Remove from the heat and add cooked and drained pasta, add grated Parmesan cheese and stir well. At the end drizzle with a bit of extra-virgin olive oil and serve warm with some shaved Parmesan on top. Enjoy!
